Each edition, our resident foodies go head to head with their take on a different ingredient. This time it is the good old cauliflower.
Cauliflower Pizza Bites
Prep time: 10 Minutes – Cook time: 30 Minutes – Total time: 40 Minutes
Yield: Makes 24 Vegan Cauliflower Pizza Bites
- 2 Cups Grated Cauliflower (washed, dried and grated using a food processor or cheese grater by hand until rice-like or thinner – Note – Approximately one head of cauliflower)
- 1 Tsp Oregano
- 2 Tsp Parsley
- 1/4 Tsp Garlic Powder
- 2 Tbsp Coconut Oil
- 1-2 Tbsp Frank’s Hot Sauce
- 1 Flax Egg (1 Tbsp Ground Flax and 3 Tbsp Warm Water)
- 1/2 Cup Firm Tofu
- 1/2 Cup Chickpeas (Cooked and Drained)

I go on Pinterest a lot. A craze that has been spreading across Pinterest like wildfire recently is cauliflower crust pizza. Seemed kind of tricky in my opinion. Two of my friends have tried to make them and ended up with a lot of cauliflower stuck to some baking paper, so being the lazy so-and-so that I am, I decided to make tiny muffin-sized cauliflower bites instead. Plus, I got to put savoury ingredients into a cupcake tray, which felt so wrong and yet so very right.
I must point out straight away that I used this recipe more as inspiration than a strict how-to. Glancing at the ingredients list, I realised I didn’t have coconut oil so substituted olive oil which seemed to work just fine. I also didn’t have parsley so I used basil, and more oregano. I point blank refuse to use powdered garlic as I can’t see why anyone would need to powder something that keeps for months on end in its natural state. So I used plain old chopped garlic cloves, 2 to be precise.
In addition to this, I didn’t have any Flax for the flax egg, so I left it out and hoped for the best. I can’t really get on with pretend eggs, and use a splash of oil if anything. Finally… I didn’t have Frank’s Hot Sauce, which was a shame because I’m sure it’s a sauce Frank could be proud of. As what I’m sure is a poor substitute, I used some chilli flakes, a sprinkle of paprika and turmeric. Before you express concern for my wellbeing I can assure you I do have food in my kitchen. Just nothing for this recipe, apparently.
I would definitely recommend getting one of those ‘One calorie spray’ oils if you do any cooking with muffin tins. Instead of rubbing margarine around for about 10 minutes, you can spritz a whole tin within seconds, it’s great fun.
When making the cauliflower ‘rice’ be prepared for cauliflower to go everywhere. The recipe ended up slightly sloppy once everything had been whizzed into the blender and then mixed together. I would also mention that my muffin tins were a lot deeper than the original writer’s, so I had to adjust cooking times accordingly, and ended up with less but more hefty ‘bites’.
I definitely wouldn’t pass on the dipping sauce. These bites were nice but need some serious flavouring due to the blandness of the cauliflower/chickpeas/tofu. So my biggest tip would be don’t skimp on the herbs and spices, give it some welly!
